The History – Specialty coffee dates back to the early 1900s. The term itself emerged in the 1970s within the Tea and Coffee Trade Journal, marking a shift in
coffee culture from mere convenience to a more refined drinking experience. Over the years, advancements in agricultural practices, roasting techniques, and brewing methods, coupled with a growing appreciation for high-quality coffee, have made specialty coffee accessible to enthusiasts worldwide.
The Grading – Coffee grading is conducted through visual inspection and cupping methods. The visual inspection process entails sampling green coffee beans and identifying any defective ones. To be classified as “specialty,” the coffee must exhibit no primary defects. Following this, cupping is when the coffee is roasted and brewed with hot water to evaluate and score its various attributes, including acidity, body, flavor, and aroma.
The Regions – Countries such as Brazil, Ethiopia, Kenya, and Colombia are well-known for their specialty coffee; however, several new nations are striving to cultivate some of the finest coffee globally through knowledgeable farmers, emphasis on enhancing biodiversity, and a variety of microclimates.
The Farming – Exceptional coffee originates from producers who dedicated generations to mastering the art of cultivating the finest quality beans. These
beans are grown in carefully chosen altitudes and climates and nurtured for years before the initial harvest. The farmers commit their lives to the meticulous process of refining and enhancing the quality. The emphasis lies on quality rather than quantity. Only those beans that are free from defects and harvested at their optimal ripeness are passed on to the next stage.
The Roasting – High-quality coffee beans are subsequently moved to the coffee roaster, a craft that demands extensive knowledge and experience to create specialty-level roast profiles. Throughout the roasting process, it is essential to closely monitor the coffee, applying scientific principles of heat transfer, thermodynamics, and coffee chemistry to guarantee that the final roasted bean achieves the highest standards of quality and flavor.
